Types of Iberian ham
There are four types of Iberian ham depending on the diet and breed of the Iberian pig:
- 100% acorn-fed Iberian ham: it is made with pure Iberian pigs, free-range fed with acorns and other natural resources of the pasture during the montanera, which is the fattening season that runs from October to February. This ham is identified by its black label, or flange, "100% acorn-fed Iberian"
- 50% acorn-fed Iberian ham: it is made with 50% Iberian breed pigs fed with acorns and other resources natural areas of the pasture during the montanera. This ham is identified by its red label, or flange, "50% acorn-fed Iberian ham."
- Iberian cebo de campo ham: it is made with Iberian pigs fed with a mixture of feed and natural resources from the pasture during its growth, and free in the field during the last months before slaughter. This ham is identified by its green label, or flange, "Iberico de Cebo de Campo".
- Iberian Cebo Ham: it is made with Iberian pigs fed exclusively with feed and cereals on farms throughout their lives. This ham is identified by its label, or white "Iberico de Cebo" flange.
